Tender texture with a delicate flavour, Capocollo is the pork counterpart to Bresaola. Similar to prosciutto, both pork-derived cold-cuts are used in similar dishes: sliced thin for antipasto, panini and traditional pizza.  Using the neck to the ribs of the shoulder, this cut is marinated in salt, garlic and spices, then naturally slow aged for 3 months. Applying our traditional nitrite free process guarantees a delicate, tender and creamy mouth feel to the end.
