Lonza, the eye loin of pork, is seasoned with pepper and spices, wrapped with a natural collagen casings and tied. At the end of the seasoning process, ageing of three to four months begins to achieve its intended flavour. When sliced, Lonza has a uniform pink colour. With slightly peppery flavour, cured Lonza is great to enjoy in sandwiches, on a platters and pizzas, as pork carpaccio with rocket, parmigiano and balsamic vinegar.
